VORBEREITUNG: 1 STUNDE 30 MINUTEN

0,5 kg Schweinsrücken, 100 g Schmalz, 2-3 trockene Pflaumen, 1 Löffel Honig, ein paar Pilze (Steinpilze, Maronenpilze), 1 Glas Gemüsebrühe, ein paar Rosinen, Pfeffer, Salz, eventuell 1 Glas trockener Rotwein

Mit sanfter Gemüsebrühe Pilze dünsten. Am Ende Rosinen, einen Löffel Honig und 2-3 trockene Pflaumen zugeben. Mit Salz und Pfeffer würzen.

Fleisch auf allen Seiten in heißem Schmalz anbräunen. In eine Bratpfanne legen und eine Stunde im Backofen backen, mit Bouillon oder Rotwein begießen. Weichen Schweinsrücken in Scheiben schneiden und mit Soße begießen. Am besten schmeckt er mit Kartoffeln, Rüben und jungem Kohl.
